Easy Dorito Taco Salad

When it is hot outside, it is the perfect time for cool, Summer-y type dishes, and that is why I wanted to share an easy Dorito taco salad recipe with you today.

Most of us have had some form of taco salad, but this one has a twist.  It uses Cool Ranch doritoes.  Taco salad, in my opinion is already pretty delicious, but adding the Doritos bring it to a whole new level.

When I was a child a relative of mine would often make her version of taco salad with doritos.   It was always my favorite thing to eat when we would all get together for a BBQ.

I’m actually not a huge fan of Doritos on their own.  I find them too salty, but my husband loves them!  Of course, I’m human, so if there is an open chip bag near me I’ll eat them, even if I don’t particularly like them.

Please, tell me I’m not alone in this?  I have horrible will-power.  Especially around food.

It’s true what they say, you can’t just eat one.

Anyways, with this taco salad you can do it one of two ways.  You can mix all the ingredients together in a big bowl and serve it up, or you can make it into a taco salad bar.

If I am going to a potluck or BBQ I will mix it all together, but if I have a family over for dinner,  especially one with kids, I like to go the taco salad bar route.  That way everyone can put what they like on their salad and you don’t hear the kids loudly proclaim “I don’t like that!”

When I make it into a salad bar I usually add more ingredient options for mixing.  Aside from the Doritos, I do offer plain tortilla chips.  The last time we served this dish to friends, we offered a side of homemade biscuits and rice as well.  Basically, we wanted to make sure there were a lot of carbs to choose from. 🙂

We have some form of taco, taco salad, or fajita dish in this house once a week during the warmer months.  This has been awesome because it’s fairly new in our house.  For the longest time two out of three of my kids did not enjoy tacos.

I know, who doesn’t like tacos?!

So, on to the easy Doritos taco salad!  Here is the deal,  I don’t actually measure anything.  This is one of those, put in as much as you want kinds of recipes, with a few exceptions.  You will want to make sure you start with just a little bit of salsa and sour cream so you don’t soak the salad.  You can always add more, but you can’t take any out once you put it in!

EASY DORITO TACO SALAD

1 lb of ground beef

1 package of taco seasoning

1 bag of Cool Ranch doritos

lettuce

tomatoes

grated cheddar or marble cheese

salsa (we use mild because, kids 🙂 )

sour cream

Cook up a pound of beef over medium high heat.  Once cooked through add taco seasoning according to package directions.

Stick that beef in the fridge to chill.

Cut up lettuce and tomatoes, and grate your cheese.  Mix it all together with the chilled beef.  Add salsa and sour cream.

Crush up a bag of Cool Ranch Doritos.  Toss them in the salad.  Mix well.

You won’t want to add the Doritos until right before you serve the salad, as they will get soggy if sitting too long, and then the deliciously easy taco salad turns into a really gross tasting salad.  Unfortunately, that means this salad doesn’t keep very well either.  All the more reason to eat a second helping. 🙂

I made this easy Dorito taco salad just a few nights ago, but after writing this post I could go for another bowl of this stuff right now!

  1. I make a similar recipe with cooked chopped chicken & nacho Doritos. No need for taco seasoning since the nachos Doritos have so much flavor.
    I toss it all with a mixture of 2parts ranch salad dressing with 1 part medium salsa. It can also be vegetarian if you substitute the chicken with one can drained black beans or whatever type beans you like. I usually add both the chicken & black beans. It’s always a hit. Great to bring to pot lucks…pack everything separate and bring a large salad type bowl. When you get to your destination then dump everything into the bowl and toss. I set aside a little crushed nacho Doritos & cheese and sprinkle on top. And if really want to dress it up toss a few sliced black olives & cilantro on top.
